We’ve grown to love South Western flavors and when we left Arizona, we knew we needed to bring that zing with us! Blending the bold and the bright flavors of the mountains where our other half comes from, we knew this would be a hit!
Meet Our Team
A Woodland Park, CO native with over 30 years of culinary experience, Chef Gerald Andres draws inspiration from his time living abroad and working in some of Colorado’s top kitchens. His style blends American cuisine with French, Italian, Spanish, and Asian influences, refined through more than a decade in fine dining. Formerly Chef at Relish in Breckenridge and Chef de Cuisine at Aurum Food & Wine in Steamboat Springs, Gerald now brings his passion for food, global perspective, and love of cooking home to Colorado Cantina.
A graduate of L’Academie de Cuisine and the Corcoran School of Art in Washington, D.C., Shy Skalsky has cultivated his craft through diverse culinary and management roles in both Colorado and New York. His Colorado experience includes time at Ember in Breckenridge, Sweet Basil in Vail, and most recently at Blacktree Resort in Lake George. Driven by a passion for hospitality and a gift for creating memorable dining experiences, Shy now brings his vision home to Colorado Cantina, where he blends culinary expertise with a warm, community-focused spirit.
